One of my favourite parts of the Holiday season is CHRISTMAS COOKIES! But if you’re anything like me, you know how to indulge in a dozen cookies in one sitting. I know that by eating sugar-filled, dairy-full, high-carb cookies, I am bound to get bloated, energy crashes, and tons of break-outs (not fun with all those pictures being taken at Holiday parties)
So I’ve been on a mission these past few years to make Holiday baking a little healthier. Here’s one of my favourite recipes for you. Snowball Cookies. They melt in your mouth, they are sweet, and nutty, and oh so delicious.

Cookie Ingredients
1/2 cup cold butter, cubed
1 1/2 cups almond flour
1 cup chopped pecans
1/2 cup ground xylitol or erythritol
1 tsp vanilla powder
1/4 tsp salt
1 tbsp arrowroot starch
Coating Ingredients
1/4 cup ground xylitol
1 tbsp arrowroot starch
Directions
1. Line a baking sheet with parchment paper
2. Place all the “Cookie Ingredients” together in a food processor and blend/pulse until a dough ball forms
3. Scoop dough using a tablespoon onto parchment paper-lined baking sheet and roll dough into balls
4. Freeze for 20 minutes before baking. While they are freezing, pre-heat oven to 350F
5. Bake for 15 minutes
6. Allow cookies to cool for at least 30 minutes
7. Mix together “Coating Ingredients”, and roll cookies in mixture (or dust liberally)
