Looking for a great gluten-free vegan gingerbread cookie recipe? This recipe for a healthy spin on a Christmas classic is sure to be a crowd pleaser! Even if the crowd isn’t vegan or gluten-free, I promise you they WON’T EVEN KNOW these are healthy. Seriously. If someone takes a bite of one of these and says “Oh gross, this tastes too healthy!” I want you to come back on here and tell me.

These cookies are incredible fresh out the the oven and freeze exceptionally well. Almost too well. Like you-can-eat-them-straight-out-of-the-freezer well. Which makes it a little dangerous when you make a big batch ahead of time in hopes of bringing them to a Christmas party, only to realize the day before that they have all been eaten. (Not a true story)

Ingredients

2 cups almond flour
2/3 cup arrowroot flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon ground cloves
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon allspice
1 heaping teaspoon ground ginger
4 tablespoons coconut sugar
1/2 cup molasses
2 tablespoons coconut oil, melted

Directions

1. Preheat oven to 350 degrees.
2. Combine dry ingredients in a large mixing bowl
3. Melt coconut oil in the microwave or in a small saucepan
4. Add molasses to the coconut oil and mix well
5. Combine wet and dry ingredients, mixing well with a wooden spoon until a dark golden dough is formed
6. Form dough into a ball and refrigerate for 30 minutes
7. Place a sheet of parchment paper on the counter and dust with a thin layer of arrowroot flour
8. Remove dough from the fridge and place on the dusted parchment paper
9. Dust the dough with a little more arrowroot flour and place a sheet of parchment paper  over top to “sandwich the dough between two sheets of parchment
10. Using a rolling pin, roll the dough to 1/4 inch thick
11. Use a cookie cutter of your choice to cut cookies out of the dough
12. Tranfer cookies to your parchment paper-lined baking sheet
13. Continue to roll out any excess dough in the same fashion and cut out cookies until no dough is left
14. Bake the cookies at 350F for 8 minutes
15. Allow cookies to cool completely before removing from baking sheet
